Pumpkin, Parsnip, Sweet Potato with Goat Cheese and Honey

Et voilà ! As promised, is my special Halloween recipe 🎃. A simple, quick, comforting recipe, and full of fiber that is good for your microbiota 😉.

Ingredients (for 4 people)

  • 200 g sweet potato
  • 2 parsnips
  • 200 g pumpkin
  • 4 tbsp olive oil
  • Nutmeg
  • 4 tbsp of honey
  • 20 crushed walnuts
  • 1 red onion
  • 120 g of fresh goat’s cheese
  • Baby spinach sprouts
  • 2 tbsp of cider vinegar
  • 1 pinch of whole-grain mustard
  • 1 pinch of salt

Preparation:

1/ Preheat the oven to 150°C.

2/ Cut the sweet potatoes, parsnips and pumpkin into cubes.

3/ Cut the red onion into slices.

3/ Place the parsnip, pumpkin and sweet potato cubes in a baking dish. Add the red onion slices. Add 4 tbsp of olive oil, nutmeg and salt. Bake, ± 40 min.

4/ Add the honey and crushed nuts to the vegetables.

Bake again, ± 5 min.

5/ Prepare a salad dressing by mixing 1 tsp of olive oil, cider vinegar and mustard. Mix the sauce with the baby spinach.

6/ In a deep plate, place the spinach at the bottom and add the roasted vegetables on top. Crumble the goat cheese and enjoy.
